Sardines crostini with olives |


These sardines crostini taste like a holiday! It is best to buy a bowl of sardines at the harbor in Italy, Spain or Portugal and to observe the Mediterranean bustle. Ingredients for 4 persons):
500 g of sardines
2 tbsp olive oil
6 tablespoons sunflower seed oil
1 BIO lemon
70 g of flour
50 g of green olives
50 g black olives
5 stems of parsley
1 white bread
salt and pepper
Preheat oven to 200 degrees.
Wash parsley and shake dry. Squeeze juice of the lemon. Drain green and black olives and cut into small rings. Slice white bread and put aside.
Thoroughly wash sardines and pat dry with kitchen paper. Separate the head and cut along the belly lengthwise. Carefully pull out the spine together with the small bones. Mix the olive oil and 2 tablespoons of lemon juice well and drizzle over the sardines. Salt well and pepper and turn into flour.
Heat the sunflower seed oil in a large pan and fry the sardines golden brown on both sides. Place the fried sardines on a paper towel and drain off excess oil.
Bake white bread in the oven until golden brown.
Place the sardines on the roasted white bread, garnish with green and black olives, parsley and serve immediately.
Useful information:
If you do not have a good fishmonger around the corner, you can also take pickled canned food instead of fresh sardines. This changes the basic tone of this finger food, but also the variation with pickled sardines tastes great, as they are just as good with olives, lemon and parsley! Simply drain the oil, fry the sardines briefly in a pan and with the lemon olive oil you can brush the white bread before roasting!
