Nuremberg gingerbread – this is how the classic succeeds:

Nuremberg gingerbread is a real treat from beautiful Bavaria. At the traditional Christmas market, which is probably one of the most famous in Germany, you can find the delicious gingerbread at many stalls. With this recipe, the delicious gingerbread is almost as successful as from the Christmas market. The dough consists of sugar, eggs, orange peel and lemon peel and of course there is also a great chocolate icing.

Ingredients for the Nuremberg gingerbread (for approx. 20 servings):

300 g ground almonds
200 g ground hazelnuts
170 g cane sugar
190 g lemon peel
190 g orange peel
4 tbsp honey
1 teaspoon cocoa powder
2 teaspoons of gingerbread spice
2 teaspoons Ceylon cinnamon
6 organic eggs size M
190 g lemon peel
1 pinch of salt
approx. 20 large wafers

Chocolateglaze according to this recipe

Preparation of the Nuremberg gingerbread:

1.
Preheat the oven to 160 degrees and prepare a baking sheet with baking paper. Chop the orange peel and lemon peel into cubes about 3 millimeters thick. Then stir the eggs together with the cane sugar and honey until creamy.

Now fold the ground nuts, cinnamon, cocoa powder, gingerbread spice, orange peel, lemon peel and a pinch of salt into the mixture so that a firm dough is formed.

Use a spoon to put a small portion of batter on each of the wafers until the batter is completely used up.

Bake the whole thing in the preheated oven for about 25 minutes. Then let cool down well and the Chocolateglaze prepare according to this recipe.

5.
Spread the glaze on the gingerbread, let it dry for a good hour and then store it in a biscuit box.

Interesting facts about Nuremberg gingerbread:

This recipe is based on the original recipe for Nuremberg gingerbread. The original Nuremberg gingerbread are of course only available in the Bavarian city of Nuremberg. Since the name is protected, only gingerbread made in Nuremberg may be called "Nuremberg Lebkuchen".
