Honey gingerbread – a wonderful scent in the Advent season:

Honey gingerbreads are best known for being particularly soft and juicy. The delicious cookies are prepared with plenty of honey, nuts, flour and various Christmas spices. The cookies get a special aroma from freshly grated lemon and orange peel. In this recipe, the ingredients are first heated and then mixed with the solid ingredients such as flour and nuts.

Ingredients for the honey gingerbread (for approx. 16 servings):

200 g honey
280 g ground almonds
350 g flour
280 g butter
150 g cane sugar
2 organic eggs size M
1 tbsp gingerbread spice
1 teaspoon Ceylon cinnamon
1 organic lemon
1 organic orange
1 teaspoon bitter almond oil
1 pinch of salt

Preparation of the honey gingerbread:

Preheat the oven to 170 degrees and prepare a baking sheet with baking paper. Then heat the honey with the butter in a saucepan. Meanwhile, rub the peel of the orange and lemon with a grater.

Let the honey and butter mixture cool down and mix with the cane sugar, eggs and bitter almond oil using a mixer. Now the flour, nuts, gingerbread spice. Mix the cinnamon, salt, the orange peel and the lemon peel into the batter.

Pour the dough onto the baking sheet or in molds, smooth it out and decorate with almonds and raisins. Bake the whole thing in the preheated oven for about 30 minutes, let it cool down and then store it in cookie boxes.

Interesting facts about honey gingerbread:

If the dough is filled in biscuit molds, these should only be filled about an inch, as the gingerbread will rise when baking and otherwise will not be baked through properly. With the cookie cutters you should check in advance whether they are fireproof. Alternatively, nice shapes can be cut out of the dough after baking.
