The goat cheese is served in this recipe with a refined apricot date chutney and enhances each menu as an appetizer. Very simply prepared, the combination of strong goat cheese and fruity chutney offers a wonderful variety of flavors.
Perfect as a finger food for the party guests!
Ingredients (for 6 servings):
300 g goat cheese roll
6 tbsp olive oil
1 tsp honey
900 g sweet apricots
3 tablespoons sunflower seed oil
1/2 small red chili
2 teaspoons ginger
1 pinch of turmeric
1 pinch of cinnamon
1 pinch of Bourbon vanilla
70 cane sugar
1 tbsp water
4 tablespoons of maple syrup
2 slices of white bread
salt and pepper
Cut the goat's cheese into 2 cm slices and put aside.
Wash the apricots and dates, remove seeds and cut into small pieces. Peel ginger and finely grate. Cut the chili lengthwise, remove seeds and wash thoroughly. Very finely chop.
Put 4 tablespoons of olive oil and honey in a bowl, add salt and pepper and mix well. Dice white bread and brush with remaining olive oil.
Heat 2 tablespoons of sunflower seed oil in a saucepan and sauté the ginger, chili, turmeric and cinnamon for 30 seconds. Add apricots and simmer on low heat for 3 minutes. Add dates, water and raw sugar and simmer for another 7 minutes until the apricots are tender.
Remove apricot-date chutney from the flame and add maple syrup and vanilla. Mix well.
Heat a pan and sauté the bread cubes until golden brown.
Place the goat cheese rolls on a serving plate, sprinkle with olive oil mixture with lemons and spread the apricot-date chutney on top. Garnish with two to three bread cubes and serve.
