1 cube of fresh yeast
250 g buckwheat flour
250 g rice flour
130 g corn flour
600 ml of lukewarm water

Preparation of the gluten-free bread:

Crumble the fresh yeast in about 300 ml of water and stir it with the honey and wait until the yeast becomes active.

In another bowl, mix the buckwheat flour, rice flour and corn flour with the bread spice, salt and germ oil.

Put the yeast in the flour bowl and knead for about 10 minutes to form a smooth dough. Let the finished dough rise covered for about 1 hour.

After this time, knead the dough again and put it in a bread pan. Let it rise again for 40 minutes.

Meanwhile preheat the oven to 190 degrees. As soon as the dough has risen nicely, it will bake for almost 90 minutes. Reduce the heat to 170 degrees after 10 minutes.

Things to know about gluten-free bread:

The dough goes best in a warm place and a bowl that is placed over the dough can also be helpful. If you like to eat the bread with a few stones or seeds, you can mix sunflower seeds or pumpkin seeds into the dough after the first resting period and spread them on the bread.
