Elisen Lebkuchen – this is how the classic succeeds:

Elisen Lebkuchen are certainly one of the most popular cookies during the Advent season. The delicious gingerbread is offered in all bakeries and in the supermarket. The preparation of homemade gingerbread is not that difficult and is a lot of fun. Eggs, sugar, Christmas spices, lemons, oranges and nuts are used for the dough.

Ingredients for the Elisen Lebkuchen (for approx. 20 servings):

500 g ground almonds
400 g cane sugar
5 organic eggs size M
1 tbsp honey
1 teaspoon cinnamon
1 teaspoon gingerbread spice
1/2 teaspoon nutmeg
1 organic orange
1 organic lemon
1 pinch of salt
Baking wafers

For the glaze:
Lemon frosting

Preparation of the Elisen gingerbread:

Preheat the oven to 160 degrees and prepare a baking sheet with baking paper. Wash the orange and lemon thoroughly, dry them and rub the peel with a grater.

Mix the eggs with the cane sugar and honey until creamy. Then stir the lemon and orange peel as well as the nutmeg, cinnamon, salt and gingerbread spice into the batter.

Now add the ground almonds to the dough and stir to form a smooth dough. Spread the gingerbread dough on the wafer with a spoon and smooth it out until it is used up.

Bake the whole thing in the preheated oven for about 10 minutes, let it cool down and decorate with a glaze if necessary.

Interesting facts about Elisen Lebkuchen:

The home-baked Elisen gingerbread is best kept in a Tupperware box on a cloth. The cloth absorbs moisture, so the gingerbread stays fresh longer. If stored correctly, the biscuits will last for almost 10 days. To keep them extra fresh, you can put a piece of apple in the tin, so the biscuits don't dry out so quickly.
