500 g ground beef
500 g pig fat
60 g breadcrumbs
5 tbsp mineral water
2 tablespoons mustard
1 handful of parsley
salt and pepper
Remove minced beef and pork from the refrigerator 10 minutes before preparation.
Wash the parsley, drain, pluck leaves from the stems and chop very finely. Put ground beef and pork in a large enough bowl, add breadcrumbs, mineral water, mustard and ¾ of parsley and mix well until a smooth dough is formed.
With damp hands, make small balls of about 2 cm in size.
Heat salted water in a large saucepan and bring to a boil. Pour the meatballs into the boiling water and allow to stand for 20 minutes over medium heat.
Remove the finished meatballs from the water with a sifting spoon and drain. Sprinkle the remaining parsley over the meatballs and serve warm or cold.
