This bulgur salad with spicy eggplant nuts is filling although it is pleasantly fresh. The Oriental-inspired dish suits every occasion, whether it's served as a side dish, a small snack or as a salad for the party buffet. With the addition of good olive oil, the aubergines are beautifully juicy and complement the spicy Bulgur salad with another aromatic note.
Ingredients (for 6 people):
4 small eggplants
3 tbsp olive oil
400 ml vegetable broth
1 tablespoon tomato paste
1 BIO lemon
5 stems of smooth parsley
salt and pepper
Vegetable broth according to this recipe prepare.
Pre heat the oven to 180 degrees celcius.
Wash parsley and shake dry. Put 1 stipe of parsley aside, finely chop the rest. Peel the onion and cut into small cubes. Squeeze juice of the lemon. Wash aubergines and cut into 2 cm thick slices.
Heat 2 tablespoons of olive oil in a saucepan. Steam the onion and bulgur in it. Deglaze with vegetable stock and add tomato paste. Stir well and simmer for about 15 minutes with the lid closed until the liquid is absorbed by the bulgur. Put the pot aside and let cool.
Mix remaining olive oil with lemon juice and season with salt and pepper. Lay out the baking paper on a baking tray and place the aubergines on top. Brush olive oil from both sides with the lemons and grill in a preheated oven at 180 degrees for about 20 minutes.
Mix the bulgur and the remaining lemon of olive oil well. Take the eggplant out of the oven and serve on plates. Portion one serving of bulgur salad and serve immediately.
If the bulgur does not absorb all the liquid when swelling, it can be poured through a fine sieve.
