Apple cake – fruity cake enjoyment:
This apple pie is prepared simply and tastes wonderfully fresh. The cake batter consists of a simple batter, which is refined with the zest of an organic lemon. In addition, the apples develop a great, sweet and fruity aroma when baked. The cake can be prepared with an announced visit. It also tastes good as a simple birthday cake.

Ingredients for the apple pie (approx. 12 servings):
3 organic apples
250 g flour
1/2 pack of baking powder
4 organic eggs size. M.
190 g powdered sugar
200 g soft butter
some lemon zest from an organic lemon
1 pinch of salt
Preparation of the apple pie:
Preheat the oven to 180 degrees (top / bottom heat) and grease a spring baking pan with butter. First stir the soft butter together with the powdered sugar and lemon zest until creamy. Then separate the eggs and stir the yolks into the batter.
Now add the flour and baking powder to the bowl and stir well. Then beat the egg whites with a clean whisk until stiff. Then fold the egg whites into the batter and mix well.
Wash the apples thoroughly, core them and cut into thin slices. Finally, pour about half of the batter into the springform pan and then place the apple slices on top. Then pour the rest of the batter into the mold and line it with the rest of the apples.
Bake the cake in the preheated oven for about 30 minutes. After the baking time, let the cake cool down and sprinkle with powdered sugar if you like.

Our domestic apples are in season from August to October. However, since apples can be stored well, they are usually available all year round. The taste of the apple cake can be varied according to the season. For example, you can add cinnamon to the cake, which tastes great in winter. The cake is particularly fluffy because the egg yolks and whites are processed separately. The whipped egg white makes the cake particularly light and airy. If you want to go faster, you can do without this step.
